Easy Vanilla sponge cake | Tea cake | Simple sponge cake | Basic sponge cake | Vanilla Pound cake
INGREDIENTS
All Purpose flour-1 cup ( 150g)
Corn flour- 2 tablespoon
Salt- 1 pinch
Baking powder-1 teaspoon
Egg-4 ( At room temperature)
Powdered sugar-1 cup ( 150 g) - It can be replaced with 3/4 cup granulated sugar.
Hot Milk-1/4 cup ( 60 ml) - Can be replaced with hot water
Oil/ Butter-3 tablespoon ( make it warm)
Vanilla essence-1 teaspoon

METHOD
1.In a bowl sift the dry ingredients , 1 cup all purpose flour, 2 tsp corn flour,1tsp baking powder and and a pinch of salt
2.Sift the dry ingredients 3 to 4 times .
To prepare the batter
3.In a new bowl add 4 eggs at room temperature whisk it for 5 minutes .
4.Add one cup powdered sugar little by little and whisk until light and fluffy .
5.Add 1 tsp vanilla essence.
6.Add the dry ingredients in batches and gently fold.
7.In a separate cup add 3 tsp warm oil.
8.Add 1/4 cup hot milk and mix .
9.Add little batter and mix
10.Add into the batter and gently fold until well incorporated.
11.Grease with butter and place the parchment paper on the baking pan.
12.Pour the batter into the baking pan do not pour till the brim.
13.Bake in a pre heated oven @ 180c for 20 to 25 min until a tooth prick is inserted in and comes out clean .
14.Let it cool.
15.Our moist fluffy perfect vanilla sponge cakes is ready.
