BLACK CURRANT JELLY CUPCAKES

 


 

 INGREDIENTS 

All Purpose flour-1 cup ( 150g) 

Corn flour- 2 tablespoon 

Sugar- 1 Cup(200g) -

Unsalted Butter- 1/2 cup (125 g) 

All Purpose flour- 1.5 cups (190 g)

 Baking soda- 1/2 teaspoon

 Baking Powder-1 teaspoon

 Salt- 1/4 teaspoon 

Black currant jelly cupcakes 

Egg- 2 Large

 Milk-3/4 cup 

Vanilla Essence-1& 1/2 teaspoon

METHOD

WET INGREDIENTS 
 
1. In a bowl add 125gm butter at room temperature and 1cup sugar. 
2.Whisk on high speed until smooth and creamy 
3.Add 2 large eggs one at a time. 
4.Whisk after each addition. 
5.Add 1and 1/2 tsp vanilla extract. 
 
DRY INGREDIENTS 
 
6.In a new bowl add 1.5 cups all purpose flour, 1 tsp baking powder,1/2 tsp baking soda and 1/4 tsp salt. 7.Mix the ingredients well. 
8.Sift and add the flour mixture. 
9.Mix on low speed. 
10.Add 3/4 cup milk @ room temperature. 
11.Mix on low speed until combined . 
12.Add few drops of black currant essence and mix well. 
13.Now add black currant jelly and mix well 
14.Line the cupcakes pan with cupcake sheets . 
15.Pour the batter into the cupcake sheets do not pour till the brim.
16.Put few jellies on the top. 
17.Bake in a pre heated oven @ 180c for 20 to 25 min until a tooth prick is inserted in and comes out clean .
18.Our moist fluffy perfect black currant jelly cupcakes are ready.
